Microwave Mug Cake for 1

Hi everyone! I’m so glad you stopped by today.  I don’t know about you, but I had a long day at work. Ya know, at that job that we all have so we can pay the bills. 😉 Thankfully Mr. Frugal had dinner ready in the crockpot when I got home.  He made roast today. Yum!

But I had one of THOSE days, you know the kind, and I really needed something sweet and delicious as an after dinner treat.    All of the Aldi version of Samoa cookies were gone… We are kind of addicted to those things.

So I came up with this frugal, quick, sweet microwave mug cake for one.  Mr. Frugal doesn’t like cake that much, and the kids aren’t big on eating sweets either.  So if I bake a whole cake; I end up eating pretty much the whole thing myself.

This little cake is just one serving.  It takes just a couple minutes to make and its delicious.  You need 1 box of Angel Food cake mix, 1 box of regular cake mix, water, a mug, and a measuring spoon.

I dumped the cake mix into two clean mason jars.  Label the jars so you don’t forget what you have in them.  I used my P-Touch label maker that I got from Amazon to make mine.  I printed the labels out on clear tape with black writing, but to cuten it up a bit I put the label on a piece of cute washi tape.  Then i put the washi tape label on my jars. You can find similar washi tape on Amazon. I love the way it makes the jars look.

If you don’t have a label maker, you can write on Mason jars with Sharpie Oil Based Paint markers.  They stay on really well, but can still be washed off when you want.

Ok, so back to the cake….

In a mug mix 1 ½ tablespoons of Angel Food Cake Mix,  1 ½ tablespoons of regular cake mix, and 2 tablespoons of water.  Mix these ingredients in an ungreased mug. Microwave for 1 minute and that’s it!  Your cake is ready to eat. You can top it with a spoonful of icing or hot fudge.

  • 1 1/2 Tablespoons Angel Food cake mix
  • 1 1/2 Tablespoons regular cake mix any flavor
  • 2 Tablespoons water
  • 1 Tablespoon chocolate chips

I don’t know how it is that this chocolate loving girl only has white cake mix???  I added a tablespoon of mini chocolate chips to mine. They all sank to the bottom of the cup, but they dumped right out with my cake all warm and gooey. Mmmmmm….

I haven’t calculated just how many of these 1 serving cakes you can make with 2 cake mixes, but this will definitely last quite a while. If you’re like me and need a frugal, sweet treat fix every now and then these microwave mug cakes for one will definitely fit the bill.
