Easy Crockpot Chicken and Gravy

Hi Frugal friends! I hope y’all are having a wonderful week! I can’t believe we’re at the end of January already, can you?

Today I’m going to share with you a quick and east dinner. If you work outside the home like me, it always helps to have quick weeknight meals. We usually only eat out about 2 times a month, so easy weeknight meals help get dinner on the table quick. One way I like to do that is to use my crockpot.

One of the easiest and quickest meals I like to make is crockpot chicken and gravy. This is a delicious comfort food type of meal. It’s perfect for cold winter evening.

We are usually gone for 9-10 hours a day and I’ve burned several meals because they had to cook too long in the crockpot. So since I don’t have a programmable crockpot we use a programmable timer. The kind you would use to turn your lights on and off. You can read more about it in this post.

In the morning before I go to work I put boneless skinless chicken breast in the crockpot. I don’t even thaw it. I just throw it right in the crockpot frozen. Well honestly Mr Frugal starts this most of the time.

After putting 3-4 boneless skinless chicken breasts in the crockpot, I dump a can of cream of chicken soup in a bowl and add a tsp if onion powder, a tsp of garlic powder and a ¼ tsp black pepper (I got a little heavy handed with the pepper here.). Add ½ cup of water and mix well and pour over chicken breast. That’s it!

Set your crockpot to cook for 6-8 hours on low depending on how many chicken breasts you add. I’ve also found that some crockpots cook faster than others. (This is where our little timer comes in handy.)

When I get home dinner’s practically ready. I like to serve this with mashed potatoes (yes I use instant potatoes…. they make dinner so much faster and easier after a long day at work), corn and biscuits. If you haven’t read my Easy Freezer Biscuits post you should check it out.

This is one of our favorite weeknight meals to have.  It’s super simple and doesn’t have many ingredients. So you might have everything you need on hand. I hope this quick and easy recipe encourages you to have dinner at home tonight.
