Easy Freezer Biscuits

The smell of these easy freezer biscuits baking is amazing! They make getting dinner on the table quick and easy. These freezer biscuits also make breakfast a snap. Making these is just as easy as making the biscuits you pop out of a can and taste so much better.

When I make these I like to make a lot at once. That way I only have to clean up the mess once and end up with a lot of biscuits in the freezer.

There are only 3 ingredients to this easy freezer biscuit recipe.

I use an entire 5 pound bag of flour. My favorite flour for making biscuits is Hudson Cream self rising.

Pour the flour into a huge bowl. Add the shortening, my favorite is butter flavor Crisco.

Use a pastry blender to cut the shortening into the flour. Add 4 cups of shortening…. yes 4 cups. I know that sounds crazy but we are making a lot of biscuits here. It will take some time to work all of that shortening into the flour.

Keep cutting the shortening in until it looks like coarse crumbs.

When you reach this point add the butter milk, 5 – 5 1/2 cups of buttermilk as needed. Mix gently with a spatula or just use your hands. Don’t over work the dough. You just want everything combined well.

Sprinkle some flour on your counter then put half of your dough on it. Sprinkle your dough with flour and knead it gently a few times, folding it over on itself. Roll or pat out the dough to about 1/2 inch thick.

Cut biscuits out with a biscuit cutter or a round cookie cutter if you have one. I don’t have one so I just use a glass to cut mine out.

Lay the biscuits on an ungreased cookie sheet. If they touch it’s ok they will break apart after they are frozen.

Once you cut out all the biscuits you can get from your dough, gather the scraps and press them together. Pat this dough out adding flour to your work surface if you need to and cut more biscuits. Set the remaining dough scraps aside.

Add more flour to your work surface and put the second half of dough on it. Repeat the same process…. cut biscuits, gather the scraps and press together, cut biscuits again. Gather these dough scraps and add to the dough scraps you set aside. Now press these together and cut biscuits one last time. I usually end up with about 5 1/2 dozen biscuits, but of course that will vary depending on how big you make them.

At this point I just shape any scraps into biscuits by hand instead of throwing any away. These may not be perfect, but they will be delicious! You can bake them now for a delicious treat for all your hard work 😉.

Place your cookie sheets of unbaked biscuits in the freezer and freeze for 8 hours or overnight.

After they are frozen place the biscuits in gallon size freezer bags.

Write the oven temperature (400 degrees) and the baking time (25-30 minutes) on the bags. Also, remember to date the bags. They won’t last long though. It’s so easy to take just as many as you need from the freezer for breakfast or dinner and pop them in the oven.

Freezer Biscuits
1  5 pound bag of self rising flour
4 cups butter flavor Crisco
5 – 5 1/2 cups of buttermilk
Bake at 400 degrees for about 20 minutes or until golden brown.
